Winter Flu Bomb Chicken Soup
It's very rare that I'm sick, but when I do have a cold, there's one remedy I always turn to. I truly believe that food is medicine; as is adequate rest, hydration and positive thoughts. So here is a recipe for my delicious flu bomb chicken soup recipe which is brimming with all of the ingredients required for rapid healing.
1 organic chicken frame, carcass, or 6 drumsticks
1 onion, skin on
2 celery stalks, plus leaves
4-6 garlic cloves
1 inch fresh ginger, sliced
1 tablespoon apple cider vinegar
1 tablespoon fresh or powdered turmeric
You can also add any leftover broccoli and herb stalks (keep them in the freezer and throw them into the soup prep)
Put all of the ingredients into the slow cooker on low for 7-8 hours or high for 3-4. Once done, cook up some green vegetables (I like to use leeks, broccoli and courgette) in a little olive oil, garlic, cumin and fennel seeds, grated ginger and turmeric.
Then, add the drained broth from the slow cooker (discard the vegetables and chicken carcass/bones), a little shredded chicken, some coconut milk or cream and fresh herbs to serve. Sometimes I'll add a flat rice or wheat noodle too, plus a bit of lemon, salt and pepper. Oh and chilli if you're feeling up to it.
Serve, eat and wait for it to work its' magic. Delish!
